5/2 Harvest - Green Garlic


I harvested some green garlic and overwintered parsley this weekend.


Green garlic, as I've only just recently learned, is just immature (young) garlic that looks like an overgrown scallion or green onion.  When I first read about it, I was really curious to try it myself, but I hesitated to harvest any because we only planted 22 garlic cloves last fall and I didn't really want to sacrifice any of them before the garlic bulbs matured.


But this weekend, I noticed that some of the garlic greens (leaves) had already bent and broken on their own, either because they were getting too big or because it's just been too windy/rainy in Indiana the last several weeks.  I suspect both, actually.  Anyway, so I thought, well, if some of these leaves are already damaged, then I won't hurt any by harvesting some, right?  So I snipped a few leaves just below the damage.  In case you're wondering, green garlic really does smell just like fresh garlic! 


I chopped up my first green garlic harvest into small pieces and used them as one of the toppings for our homemade pizza this weekend.  The green garlic flavor was very subtle, much less than garlic, but we enjoyed it all the same.  I wondered if the white part (immature bulb) of green garlic would taste similar, but I won't know until I actually pull a whole plant out.  Hmm, I probably should try it next week, just to see if it's worth planting a lot more garlic next year to harvest some as green garlic and some as fully mature garlic bulbs.

  1. Green garlic is really very delicious but like you, I never feel like I have enough planted to use some for fresh eating and still have enough bulbs to harvest for the coming year. I occasionally DO harvest them though as greens and they are delicious.

  3. Your pizza looks amazing. I left a few garlic bulbs in the ground over the winter just for the garlic greens this spring. They have a delicate and mild garlic flavor.

  4. Green garlic - who would have thought to just snip the green leaves? May have to try that when i need that fresh garlic flavor and no cloves on hand.

  5. I like the idea of the green garlic as mine never has enough time to mature or something. I have tried several times and have been very disappointed.

  7. This time of year I'm always trying to use up my stores of garlic. Every year I have way too much. I really ought to just dry it all and then I'd have powdered garlic.

  11. If you only snip a couple leaves off the plant won't the bulb still grow? Forgive the silly question, but I just planted my first ever garlic last fall at my parents place so I haven't even checked on it yet!

  15. kitsapFG - you and I will just have to plant twice as much garlic next year! I wonder if harvesting too much greens affects bulb development.

    GrafixMuse - ever since I learned to make my own pizza dough last year, I've really enjoyed making homemade pizza using whatever kinds of toppings on hand. You overwintered garlic that was already fully grown last year? I guess technically I overwintered mine too, but they were just little cloves that I planted in late fall.

    wilderness - sorry to hear that your garlic doesn't mature well. But at least you can enjoy some green garlic!

    RandomGardener - just a little won't hurt them, I hope!

    Daphne - wow I wish I had your problem. Then again, if I did, I'm sure I would complain. :) But powdered garlic, now there's an idea!

    Holly - I hope your garlic gets big enough soon. Are they spring-planted or fall-planted?

    Mika - that was exactly my question, too. The leaves I snipped off were already damaged, so I guess I will have my answer later this summer! I bet your fall-planted garlic is doing really well at your parents' place!
