5/9 Harvest - Two Parsnips


Two parsnips, that's all I harvested this week.  This is a brand new vegetable for me.  I've never bought one from the store, and I'm not sure that I've ever knowingly tasted one before.  It's one of those "new" vegetables that I learned about through garden bloggers, so I bought some seeds last year and planted it in my mom's California garden last fall.  They took forever to germinate (at least 4-5 weeks), I'm sure I disturbed the original sowing site several times in the meantime by planting other things on top of them because I thought they all died, and we may have pulled several of its seedlings by accident because we didn't know what its seedlings looked like and thought maybe they were weeds.  Long story short, we ended up with only two parsnips from a dozen or so seeds I initially sowed.



Parsnip One looked okay, kind of like a very long carrot but with much more pronounced tapering to its tip.



Parsnip Two, hmm, not so sure about this one.  When I pulled it out, my first thought was "alien tentacles!"  Upon further inspection, my second thought was still "alien tentacles!"

  1. Yup you are growing aliens in your garden. And he is sitting down and has one of his legs crossed. I've yet to grow parsnips. It is always one of those veggies that I will grow someday. This year I'm growing kohlrabi which was also in that category.

  3. The twisted one is likely the result of the root encountering some compacted soil or a rock. Parsnips deeply dug, loose soil, to grow straight and fat. Someone should have warned you that they are slow to germinate! Parsnips are delicious cooked and then mashed - with cream and butter added (just like mashed potatoes) and a sprinkle of grated nutmeg. Yum! They are also delicious peeled and sliced and sauteed in olive oil/butter with just a sprinkle of sea salt. And... chicken soup is just not complete without a peeled and sliced up parsnip in it. :D

  5. I look forward to hearing how you like the parsnips--I love them roasted. The tops are gorgeous, though inedible--but that is nice when it takes them forever. I overwinter mine.

  7. OK I'm crazy for parsnips. This year I've got 6' of a 4' wide bed in parsnips. You really start to appreciate them when you can dig some up in midwinter and roast them. Nothing better.

  8. That 2nd once looks like an octopus! I'm growing parsnips for the first time this year also. It'll be quite an experiment for us. I hope they come out as nice as yours.

  10. I've never grown parsnips and I don't believe that I have ever eaten them.

    I love your alien parsnip. I'm sure that it will taste as good as the other one!

  11. Any report on taste yet? I've heard that putting them in soon after fresh laid manure can do that, but if you disturbed the seedlings it could easily have been that as well. Still- impressive considering you didn't think they would even grow! :-)

  12. How did you end up cooking them? I grew a few parsnip out of curiosity when I first started gardening. Now I don't remember what I did with them......

  13. Oh neat! You'll have to tell us what you do with them. I've never had parsnips before either. It was on my 'maybe' list when buying seeds this year, but I decided to wait at least until next year to take the leap into the world of parsnips.

  14. Hahahahaha, that really made me laugh! I know exactly what you mean about alien tentacles. My carrots always come out with weird shapes like that. It makes me somewhat in awe of farmers who make a living from growing straight regular shaped veg, and I dread to think how?
